Besides being a cool Scrabble word, quinoa is one of my current favorite foods. According to wikipedia, "this crop has come to be highly appreciated for its nutritional value, as its protein content (12%–18%) is very high. Quinoa contains a balanced set of essential amino acids
for humans, making it an unusually complete foodstuff. It is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa is gluten free and considered easy to digest. Because of all these characteristics, quinoa is being considered as a possible crop in
NASA's Controlled Ecological Life Support System for long-duration manned spaceflights."

Last night (and again for lunch today as leftovers) I had quinoa with dried fruit and pine nuts, dressed with a lime vinaigrette that contained a bit of minced garlic (the recipe's from Deborah Madison's Local Flavors cookbook).  I love this stuff. It's fairly sweet, with a nice bite of garlic, and then pine nuts, which I would eat by the handful if given the choice.  Yum.

I've been doing lots of quinoa dishes for my roller derby team's pre-game dinners. I have that cookbook and haven't tried anything out of it yet. I think I know what I'm making for the team now next Friday. :)
