sweet potato mole enchiladas

skin and cube 2 sweet potatoes, toss with olive oil, salt, pepper, cumin, throw on roasting tray, roast til soft (30ish minutes)
while potatoes are roasting, slice onions into thin rings, throw in heavy skillet over medium heat, stir occasionally until onions are softish and starting to brown. add a splash of olive oil, continue to cook til caramelized.
pop open a can of black beans, and a can of trader joe's mole
add a couple of tablespoons of mole to the bottom of a 9x12 baking pan, mix in some water
assemble enchiladas:
roll tortilla around in watery mole
add some cheese, sweet potato, black beans, onions to tortilla and roll up
repeat til the pan is full
pour some more mole over the pan o'enchiladas
bake at 350ish til cheese is melty - 15-20 minutes, or until you get bored and are hungry
this is my new favorite lunch food. tim made me a panful last night, and it's a tasty lunch today.
